Couper les poireaux en rondelles, les laver. Mettre \u00e0 cuire dans une po\u00eale avec un filet d&rsquo;huile avec&nbsp;l&rsquo;oignon et l&rsquo;ail \u00e9minc\u00e9s finement.&nbsp;<\/li><li>Pr\u00e9parer la b\u00e9chamel, faire fondre le beurre dans une casserole, ajouter la farine, remuer et ajouter le lait petit \u00e0 petit. Assaisonner.&nbsp;<\/li><li>Ajouter le saumon fum\u00e9 coup\u00e9 en petits d\u00e8s avec le poireaux. M\u00e9langer. Ajouter la ricotta. Rectifier l&rsquo;assaisonnement. &nbsp;<\/li><li>Ajouter un peu de b\u00e9chamel selon la consistance du m\u00e9lange, l&rsquo;ensemble ne doit pas \u00eate trop liquide pour bien tenir dans les cannellonis.&nbsp;<\/li><li>Remplir les cannellonis de poireaux et les d\u00e9poser c\u00f4te \u00e0 c\u00f4te dans un petit plat \u00e0 gratin. Verser la b\u00e9chamel dessus et enfourner 20 min \u00e0 200\u00b0C.
